From the snow-laced valleys of the northeast to the smoky kitchens of the Deccan, the dishes reflect Chef Kunal’s lifelong travels, childhood memories, and the secret flavours passed down through generations.
Among the highlights is the Lamb Nihari, slow-cooked the way Delhi’s winter mornings demand – rich, deep, and melt-in-your-mouth tender. The Chilli Chicken brings back the bold, wok-tossed nostalgia of college canteens, made sharper, smokier, and just right. Mammallapuram Fish and Prawns offer a taste of coastal tandoori magic, marinated in southern spices and served with the crunch of kosambir salad. The Kothey Momos, inspired by Tibetan corners in North India, arrive half-steamed and half-fried just like they do in the hidden alleys where they were first found.
